The “Boosted” Chocolate Lava Cake �
Serves 4 – Prep time: 15 min | Cook time: 15 min
Ingredients:
- 150g dark chocolate (70% or vegan if needed)
- 80g hazelnut butter or unsweetened applesauce (for guaranteed moistness)
- 2 eggs (or 2 tbsp ground flaxseed + 6 tbsp water for a vegan version)
- 40g almond flour (or coconut flour for a nut-free option)
- 30g maple syrup or honey
- A pinch of salt
- 1 tsp vanilla extract
Steps:
- Preheat the oven to 180°C (350°F).
- Melt the chocolate using a double boiler or microwave.
- In a bowl, mix the hazelnut butter (or applesauce), eggs (or flaxseed mixture), maple syrup, vanilla, and salt. Whisk vigorously.
- Add the melted chocolate, then the almond flour. The batter should be smooth and shiny.
- Pour into greased or lined muffin molds.
- Bake for 12-15 minutes: the center should still be slightly gooey!
- Let cool slightly before unmolding. Serve with a scoop of vanilla ice cream or fresh raspberries.
