The “Boosted” Chocolate Lava Cake �

Serves 4 – Prep time: 15 min | Cook time: 15 min

Ingredients:

  • 150g dark chocolate (70% or vegan if needed)
  • 80g hazelnut butter or unsweetened applesauce (for guaranteed moistness)
  • 2 eggs (or 2 tbsp ground flaxseed + 6 tbsp water for a vegan version)
  • 40g almond flour (or coconut flour for a nut-free option)
  • 30g maple syrup or honey
  • A pinch of salt
  • 1 tsp vanilla extract

Steps:

  1. Preheat the oven to 180°C (350°F).
  2. Melt the chocolate using a double boiler or microwave.
  3. In a bowl, mix the hazelnut butter (or applesauce), eggs (or flaxseed mixture), maple syrup, vanilla, and salt. Whisk vigorously.
  4. Add the melted chocolate, then the almond flour. The batter should be smooth and shiny.
  5. Pour into greased or lined muffin molds.
  6. Bake for 12-15 minutes: the center should still be slightly gooey!
  7. Let cool slightly before unmolding. Serve with a scoop of vanilla ice cream or fresh raspberries.
